Ingredients
- 70 gram Flour All Purpose
- 45 gram Oat Flour
- ⅓ cup Whey Powder Irish Dairy Unflavored
- 1 ¼ teaspoon Pumpkin Spice
- ⅛ teaspoon Allspice Ground, Cloves
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ¼ teaspoon Fine sea salt
- 90 gram coconut sugar
- 75 gram 2% Greek Yogurt
- 125 gram Canned Pumpkin
- 2 Tablespoon Avocado Oil
- 1 large Egg room temperature
- ⅓ cup Dried Cranberries Unsweetened
For Garnish
- 1 Tablespoon Pumpkin Seeds Roasted, Salted
- 2 Tablespoon Granola
Instructions
- Preheat oven to 350 - oven rack on middle rung.
- Light spray 6 muffin liners, and corresponding muffin tin with avocado spray.
- Whisk together dry ingredients through spices, Set aside.
- Whisk together wet ingredients through oil. Add egg until incorporated.
- Add baking powder, baking soda, and salt, and stir until incorporated.
- Stir in dried cranberries
- Scoop into muffin liners in muffin tin.
- Bake at 350 for 20 minutes or until the toothpick comes out clean.
- Let cool in a muffin tin for 10 minutes and enjoy!
- Can be frozen for up to 1 month.
